It’s not a pre-made flour mix but rather a tool to ensure structure and elasticity in your dough, enabling you to bake unparalleled gluten-free bread from virtually any gluten-free flour.

This versatile base can even enhance traditional flours like rye, creating light, hydrated bread that’s a cut above.

Directions:

  1. Mix 40–50g of the dough base with 400g of hot water and blend thoroughly using a hand blender.
  2. Let the mixture cool to room temperature, then combine it with 300g of gluten-free flour, 1 tablespoon of sourdough starter, and 10g of salt.
  3. Allow the dough to proof for 12 hours at room temperature and an additional 12 hours in the fridge.
  4. Bake in a preheated oven at 210°C until golden brown.
