YB1 yoghurt culture in bulk

For the preparation of high-quality, probiotic, Bulgarian-type yogurt. It has a homogeneous and creamy texture, rich in smell and taste, very healthy yogurt.

It is also very tasty in itself, from which you can easily make drinking yoghurt, Greek yogurt, tzatziki dressing, salad dressing, yogurt cream, fruit yoghurt, etc.
to inoculate 100 litres of milk 5-10 g. is the recommended culture quantity. 

Streptococcus thermophilus
- Lactobacillus delbrueckii subs. bulgaricus

- bacterial carrier: lactose

maintains its total activity within +4°C

Recommended technology:

- pasteurization of raw milk at 92-95 °C with 10 minutes of heat retention
- cooling to 45-48°C
- inoculation with YB1 culture (culture dissolved in a little lukewarm water in advance)
- heat keeping at 45-48 °C for 4-6 hours, until the desired acidity level is reached
- after-ripening, solidification in the refrigerator for at least 6 hours

After that, only slow processes take place in the yogurt, its aromas are further refined by 1-2 days of cooled ripening. 
It is characterized by slow post-acidification, therefore it retains its perfect quality and consistency for 18 days. 

Recommended inoculating dose depending on the type of yoghurt and technology:
100L = for 100-200 litres
500L = for 500-1000 litres
1000L = for 1000-2000 litres
