YB1 Yogurt Culture in Bulk
YB1 yogurt culture is perfect for creating high-quality, probiotic Bulgarian-type yogurt with a homogeneous and creamy texture, rich aroma, and exceptional taste. It is a healthy option that is versatile in various yogurt preparations.
This culture can be used to make a wide range of yogurt-based products, including drinking yogurt, Greek yogurt, tzatziki dressing, salad dressing, yogurt cream, fruit yogurt, and more.
Recommended Technology:
- Pasteurize raw milk at 92-95°C for 10 minutes.
- Cool the milk to 45-48°C.
- Inoculate with YB1 culture (dissolve culture in a small amount of lukewarm water in advance).
- Keep the mixture at 45-48°C for 4-6 hours, until the desired acidity is reached.
- After ripening, solidify in the refrigerator for at least 6 hours.
- For further refinement of aromas, allow the yogurt to cool and ripen for 1-2 additional days.
Shelf Life:
- The yogurt undergoes slow post-acidification, which allows it to maintain excellent quality and consistency for up to 18 days.
This bulk yogurt culture provides reliable results, producing a rich, smooth yogurt ideal for a variety of uses.
