Ingredients:
- 1 packet of Plant-Based Natural Yogurt Mix / Plant-Based Coconut Yogurt Mix
- 1 dose of A4Y yogurt culture
- 1 liter of water

Instructions:
1. Boil 1 liter of water.
2. Remove the water from the heat, pour the entire packet of Plant-Based Yogurt Mix into the hot water, and mix thoroughly using a hand blender.
3. Cool the plant milk down to 42-44°C, and strain it through the straining bag to remove any foam and achieve a completely smooth yogurt.
4. Inoculate the plant milk with 1 dose of A4Y yogurt culture. It's best to dissolve the culture in a small amount of water first for easier mixing.
5. Ferment for 6 hours, ensuring the temperature stays between 42-44°C throughout the entire process.
6. Once fermentation is complete, refrigerate the yogurt, let it cool fully, and enjoy!
Tips:
- The mix is added to boiling water to bring the protein in the mix to a coagulating state. It's important to pour the mix into water around 100°C and mix it thoroughly. After that, no further heating is needed, as it burns easily.
- If you don’t have a hand blender, you can use a regular blender or mix it manually with a spoon using heat equalization. In this case, add a small amount of hot water to the mix in a separate bowl, mix thoroughly, and then pour the entire mixture into the remaining hot water.
- While cooling the plant milk, you can skim off the foam with a spoon or strain it through a straining bag for simplicity.
- Temperature can be maintained with a fermenting machine, by insulating the container, using a sous vide machine, an electric oven (if it can maintain low temperatures), thermal box, water bath, etc. The key is to aim for accurate temperature control.
- It's more enjoyable if you pre-portion the yogurt into 6-7 servings. While temperature control can be trickier, it's worth it if you can manage it.
- If you're using a fermenting machine, consider adding a cup of warm water inside to help evenly distribute the heat.
